I've just eaten one of these babies (Inés Rosales' tortas). They melt in your mouth like sugared biscuit powder. I'm not really sure what the layer of marmalade is all about. I might have to try and split the two sides like a Kingston to single out the flavour. The tortas are made in Seville. I didn't go there but they had a provinces of Spain food and arts and crafts promotion on the top floor of El Corte Ingles yesterday. The also had an exhibition of costumes from around Spain entirely made from paper! The things you can do with paper doilies. A-M-A-Z-I-N-G!
